Recipe Meat Rogan Josh

   Rogan Josh is originally cooked in Kashmir and this recipe is a part of Kashmiri         cuisine.

   Ingredients
1 kg meat cut in medium size pieces
5 cups of water
2 1/4 tsp salt
1 tbsp garlic, minced
1 cup pure ghee
   4 cloves
   8 green cardamoms
   5 tsp turmeric powder
   2 tbsp onion paste, fried
   4 tsp Kashmiri red chili powder, dissolved in just a cup of water
   1/2 tsp saffron, ground, add to 2 tbsp warm water
1 cup dry mawal flowers, heat in a cup of water
   1/4 tsp black pepper, powder                                                                                               
   boil for cooking.
   How to cook
   Boil meat in water; remove the scum that rises in the water until it becomes clear. 
   Add salt and garlic. Boil the meat until it is half done.
   Remove from heat, take the pieces of meat out. Wash them under cold water. Keep             meat aside. Strain the water through a fine sieve, collect in another pan.
   Return the water to heat and bring it to a boil, add meat.  Heat ghee in a pan; add               cloves, sauté until they crackle. Remove from heat, sprinkle a tbsp of water and cover it.
   Boil the strained water, add to it green cardamoms, turmeric powder, clove-flavored           ghee and onion paste. Boil for 10 minutes.
   Stir in red chili water, reduce the heat, cover and cook until the meat is tender.
   Add the mawal flower extract, saffron water and black pepper powder.
   Mix well and bring to a boil rapidly.
