Paneer /cottage cheese is made at
home by curdling the milk. This is homemade organic paneer and blanched spinach
recipe. This is a homemade recipe and is
served with naan/roti or rice. It is a very popular dish in Indian homes and
very nutritious. It makes for a perfect dish for the weekend or for guests you
invite over.

Ingredients

bunches of spinach (approx 1kg)
-250 gms paneer
-1 onion,
finely chopped
-
4-5 garlic cloves
-
1 inch ginger
-¾ tsp garam
masala
-⅛ tsp red
chili powder
-2 tbsp heavy
cream, or use milk
Salt
to taste
Preparation
Wash
and blanch the spinach in boiling water with a little salt for two minutes.
Remove and wash it in cold water.
Pressure
cook the leaves with chili powder, and garlic cloves, a little salt. Three
minutes is enough, remove and blend the leaves. The leaves will retain the
color.
Take
a wok add 2 tsp oil, heat it, add ginger, sauté till golden brown add onions
and sauté till onions are translucent to this add spinach paste , add water if
required, keep the paste as thick and thin as you require. Cover and keep on
slow flame. Stir occasionally. Once spinach is cooked, add garam masala,
continue to cook on simmer for 2-3 minutes. Add cream, mix, add cut pieces of
paneer (or you can fry the paneer pieces in a little oil which will give the
palak another flavor) and let it simmer for 5 minutes.
Shut
the flame. Palak Paneer is ready, serve with naan/ roti, or rice or with maake
(corn) ki roti.
