Malai Kofta made in paneer with
addition of cashew, almonds and raisins. Their appearance adds a twist while
eating with roti.

Ingredients
For Kofta
-1 cup paneer grated
-2 boiled potatoes
-1/2 tsp garam masala
- 1 tbsp cashew nuts chopped
1 tbsp almonds chopped
2 tbsp corn flour / maida
Oil for deep frying
Salt to taste
For Puree
1 tbsp oil
1 onion finely chopped
2 tomatoes chopped
1 tsp ginger garlic paste
½ turmeric powder
1-2 tsp chili powder
1-1/2 tsp coriander powder.
For Gravy
2 tsp oil
1 bay leaf
2 Cardamoms
3 cloves
1 inch cinnamon stick
¼ cup cashew paste
½ tsp garam masala
Salt to taste
¼ cup water for consistency
¼ cup fresh cream – low fat
1 tbsp kasuri methi
To make koftas
Take a large bowl, add a cup of grated paneer, potatoes and
mash them. Make sure there are no lumps. You can also grate the potatoes. Add
salt, garam masala, chopped dry fruits, mix and make lemon size balls. Coat them
with maida or corn flour for crispy coating. Deep fry the koftas on medium heat.
Turn them golden brown. Remove from oil and place them on a tissue paper till
the excess oil drains.
To make puree
Take a large kadai/wok. Take 1-2 tsp of oil, sauté the
onions till they turn pink. Add ginger garlic paste, sauté till the raw smell
disappears. Add tomatoes and sauté for two minutes. Now cook the ingredients
for 15 minutes or until cooked. Add the dry spices – chili powder, coriander
powder, turmeric. Cook the paste on medium flame; switch off the gas, keep
aside to cool. Put all this in a mixture jar, blend and get a puree.

To the
kadai/wok add 2 tsp of oil, to this add bay leaf, cardamom, cloves and cinnamon
and sauté till they give out a fragrance. Add the blended puree and boil paste
for three minutes on medium heat, keep stirring as it will start to pop and
mess your kitchen. Add cashew paste, mix it, and let it cook for ten minutes on
simmers.
To his add
garam masala, salt, and water. Adjust the tick consistency of the curry as you
cook along. Bring it to a boil. Slow the
heat and let it cook for 10 minutes. Add ¼ cup fresh cream and cook for a
minute add kasuri methi, Switch off the heat.
Your Malai
Kofta is ready.
Plate it
up.
Take a
plate, place the kofta on it and pour gravy all over the koftas.
You can
enjoy it with chappati, roti, and naan.
