Recipe for Kaali Daal



A much loved daal in Punjab it is more often called ‘Maa ki Daal’. It is made of whole Urad (akha -full) dal – black lentils. It is a high starch dal and used more in Northern India due to the cold climate. It is a rich diet, and spicy that keep the body warm. It has found favor on many dinner tables and homes.

Ingredients
- 300gms Urad dal (akha - full black urad lentil).
-100gms dried red kidney beans

- 250gms tomatoes –chopped
-100gms butter
-1 tbsp – fine grated ginger
-1 tbsp crushed garlic
-1 tbsp vegetable oil
1 tsp cumin seeds
1 big onion chopped finely
1 tsp red chili powder
1 tbsp coriander finely chopped
How to make
You need to begin a day early. Take the black lentils and red kidney beans, wash and soak overnight.  Next day place it in a pressure cooker and cook the lentils on medium heat. It will require cooking for at least an hour. Check if the lentils are done, if not then add water if they look dry. 
One tender open the lid and keep aside. 
Heat oil in a vessel add cumin seeds, sauté till brown, add onions, ginger, garlic, tomatoes and chili powder and cook for 15 minutes on medium heat. Cook the masala, stirring occasionally until cooked. To this add the dal or vice versa and add salt. Stir and continue to cook and mix gently. The color of the dal should be brown.
The dal is ready, Serve in a bowl and spoon in cream if you like and coriander and cut tomato. To add a little richness add a spoon of hot ghee on top.
You can enjoy kaali daal with paratha, rice or naan with a dollop of butter to give it an added flavor.
