Recipe for Butter Chicken
Butter Chicken is a very popular dish among the patrons of Indian food. This dish can be the hero at a family get together or a celebration. It is favorite among all age groups. It is served with chapatti, roti, naan or pulao/pilaf and raita. This can be made in any kitchen if you have the ingredients and chicken with you.
The level of spiciness can be controlled depending on what your guests like.

Ingredients of Butter Chicken

1 kgs chicken
2 tbs refined oil
1 tsp red chilli powder
6 pureed tomato
2 tsp coriander seeds
2 crushed cinnamon
5 sliced green chillis
4 cloves
500 gm butter
4 de seeded and broken red chilies
1 tsp coriander powder
1 1/2 tsp kasoori methi powder
2 bay leafs
2 tsp salt
2 onions chopped
4 handfuls of dried fenugreek leaves crushed
For Marination

2 tsp onion paste
1 tsp garlic paste
1/2 cup yoghurt
3 green cardamoms
1 tsp ginger paste
1 tsp mace powder
2 black cardamoms
1/2 tsp sugar
For Garnishing

3 tbs fresh cream
1 handful coriander leaves

Step 1
Take a large bowl, add yogurt, green chillies, onion paste, ginger-garlic paste, salt, sugar, green and black cardamoms and mace powder. Add raw chicken cut in medium sized pieces into the bowl and mix. Cover and keep in fridge. Allow the chicken to rest and marinate in these juices. Once the chicken is marinated, roast it either in an oven or tandoor or in an oven until the meat is done.

Step 2
Heat some butter in a pan add bay leaves, cloves, cinnamon, red chillies and crushed coriander seeds. Sauté it. Add a little onion, red chilli powder, coriander powder, kasoori methi powder and tomato puree. Sauté all these ingredients for 5 minutes and once done remove from the flame, let it cool a bit and blend it in a blender.                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Step 3
Take the remaining butter and heat it. Add the blended mixture and bring to a boil. Add the marinated and cooked chicken pieces, fresh cream with a little salt and mix well. The blend should not be too thick add a little water. Add sliced green chilies, the crushed fenugreek leaves and let it simmer on slow flame for few minutes. Bring it to a .boil.

Step 4
Transfer the dish to a serving bowl and garnish with coriander leaves and cream. This recipe is easy-to-make and uses very simple ingredients. Add spices according to your liking - green chillies or black pepper powder.
